    Prepare the Mussels

    Rinse the mussels under cold water, removing any beards and debris. Discard any open mussels that do not close when tapped.

    Cook the Sausage

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the spicy house sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.

    Add Garlic and Tomatoes

    Add minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant. Add the chopped heirloom tomatoes and cook until they begin to soften, about 5 minutes.

    Deglaze with Wine

    Pour in the white wine, scraping the bottom of the pot to deglaze. Bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

    Finish and Serve

    Stir in chopped fresh herbs, season with salt and black pepper to taste. Serve the mussels with the broth in bowls, accompanied by slices of noble bread for dipping.
