Prepare the Tomato Soubise
In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft and translucent. Add diced tomatoes, season with salt and cook until the tomatoes break down into a sauce, about 15 minutes. Blend the mixture until smooth and set aside.

Cook the Pasta
In a large pot of salted boiling water, cook the malloreddus pasta according to package instructions until al dente. Drain and set aside.

Cook the Sausage
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the spicy sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

Combine Ingredients
Add the cooked pasta to the skillet with the sausage, then pour in the tomato soubise. Toss everything together until well combined. Adjust seasoning with salt, pepper, and red pepper flakes to taste.

Serve
Plate the pasta mixture and top with torn pieces of buffalo mozzarella, fresh pea greens, sliced heirloom tomatoes, and grated parmesan cheese.
