Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, salt, and black pepper on all sides.

Roast the Meat
Place the roast in a roasting pan and roast in the preheated oven for 20 minutes. Then reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the Roast
Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for about 20-30 minutes.

Prepare the Rosemary Jus
In a saucepan, add beef broth and any drippings from the roasting pan. Bring to a simmer and reduce by half until slightly thickened.

Make Horseradish Cream
In a bowl, mix together horseradish, sour cream, and lemon juice. Season with salt and pepper to taste.

Serve
Slice the prime rib and serve with rosemary jus and horseradish cream on the side.
