    Make the Baba Ghanoush

    Preheat your oven to 400°F (200°C). Cut the eggplant in half lengthwise and brush the cut side with olive oil. Place it on a baking sheet cut side down and roast for about 30-35 minutes or until the flesh is soft. Let it cool, then scoop the flesh into a bowl.

    Blend the Ingredients

    Add tahini, garlic, lemon juice, salt, and pepper to the eggplant flesh. Blend until smooth and creamy. Adjust seasoning to taste.

    Prepare the Burger

    Toast the burger buns lightly. Spread a generous amount of baba ghanoush on the bottom half of each bun.

    Assemble the Burger

    Layer lettuce, sliced onions, tomato, and pickles on top of the baba ghanoush. Place the top half of the bun on each burger.

    Serve

    Serve the veggie burgers with cowboy chips on the side.
