Focaccia

Pesto Dip

Method

Focaccia

  1. 1

    Prepare the Dough

In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy. Add flour, olive oil, salt, and fresh rosemary. Mix until a dough forms.

  2. 2

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  3. 3

    Let it Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

  4. 4

    Shape the Focaccia

Preheat your oven to 425°F (220°C). Once risen, punch down the dough and transfer it to a greased baking sheet. Stretch it to fit the pan and make dimples using your fingers.

  5. 5

    Add Toppings and Bake

Drizzle with olive oil, sprinkle with sea salt, and add any additional toppings. Bake for 20-25 minutes or until golden brown.

Pesto Dip

  1. 6

    Make the Pesto

In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.

  2. 7

    Add Oil and Season

With the processor running, slowly stream in the olive oil until the mixture is smooth. Season with salt and black pepper to taste.

  3. 8

    Serve

Transfer the pesto to a serving bowl and serve it alongside the freshly baked focaccia.
