Cooking Instructions

  1. 1

    Roast the Tomatoes

Preheat the oven to 400°F (200°C). Toss cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until blistered.

  2. 2

    Cook the Pasta

In a large pot, bring salted water to a boil. Add farfalle pasta and cook according to package instructions until al dente. Drain and set aside.

  3. 3

    Sauté the Vegetables

In a large skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add zucchini, bell pepper, and carrot, cooking for about 5-7 minutes until tender.

  4. 4

    Combine Ingredients

Add the cooked farfalle and roasted tomatoes to the skillet with sautéed vegetables. Toss everything together gently to combine. Adjust seasoning with salt and pepper if needed.
