Preparation of Breakfast Potatoes

    Cook the Potatoes

    Boil or steam the breakfast potatoes until tender, then cut into cubes and season with salt and pepper.

    Sauté the Potatoes

    In a skillet, heat some oil over medium heat and sauté the cubed potatoes until golden brown and crispy.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until whites are set and yolks are still runny.

    Cook the Canadian Bacon

    In a skillet, cook the Neuske's Canadian bacon over medium heat until heated through and slightly crispy.

    Toast the English Muffins

    Split the English muffins in half and toast until golden brown.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks and lemon juice together. Place over a pot of simmering water, whisking constantly until thickened. Gradually add melted butter while whisking. Season with salt and cayenne pepper.

    Assemble the Dish

    On each toasted English muffin half, place a slice of Canadian bacon, top with a poached egg, and drizzle with hollandaise sauce. Garnish with chopped chives. Serve with breakfast potatoes.
