    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Sauté Vegetables

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the mushrooms, bell pepper, spinach, snap peas, and kale. Sauté until the vegetables are tender, about 5-7 minutes.

    Mix Egg Whites and Cheese

    In a mixing bowl, whisk together the egg whites, ricotta, and half of the grated parmesan. Season with salt, pepper, and mixed herbs.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine. Cook without stirring for about 3-4 minutes until the edges start to set.

    Add Olives and Bake

    Sprinkle the sliced olives and remaining parmesan on top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.

    Cool and Serve

    Remove from the oven and let it cool for a few minutes. Slice into wedges and serve warm or at room temperature.
