Prepare the Meat
Remove the prime rib roast from the refrigerator and let it come to room temperature for about 1 hour before cooking.

Preheat Oven
Preheat your oven to 450°F (232°C).
Seasoning

Season the Roast
In a small bowl, mix the kosher salt, black pepper, garlic powder, and chopped rosemary. Rub the olive oil all over the roast, then apply the seasoning mix thoroughly on all sides of the meat.

Roast the Prime Rib
Place the seasoned prime rib roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast, making sure it does not touch the bone. Roast in the preheated oven for 15 minutes.

Lower Temperature
After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue cooking until the thermometer reads 130°F (54°C) for medium-rare or 140°F (60°C) for medium, about 1.5 to 2 hours.

Rest the Meat
Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before carving to allow the juices to redistribute.

Slice and Serve
Carve the prime rib into slices and serve with horseradish sauce and au jus on the side, if desired.
