Preparing the Fries

    Preheat your oven to 425°F (220°C) if using frozen fries, or heat oil in a large deep fryer to 350°F (175°C) for fresh fries.

    If using fresh Russet potatoes, wash and peel them. Cut them into fries, about 1/4 inch thick.

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps them become crispy.

    Drain the fries and pat them dry with a clean towel to remove excess moisture.

    If baking, spread the fries in a single layer on a baking sheet, drizzle with a little vegetable oil, and sprinkle with salt. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    If frying, carefully add the fries to the hot oil in batches and fry for about 5-7 minutes until golden and crispy. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt immediately.

Assembling the Cheese Fries

    Once the fries are cooked and crispy, arrange them on a large serving platter or a baking dish.

    Sprinkle the shredded Monterey Jack and cheddar cheese evenly over the hot fries.

    Top with the crumbled applewood smoked bacon.

    Drizzle ranch dressing generously over the entire plate.

    Optionally, place the platter under the broiler for 2-3 minutes to melt the cheese further, watching closely to avoid burning.
