Preparing the Filet

    Season the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking. Season generously with kosher salt and freshly ground black pepper on both sides.

    Preheat the Pan

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat for about 5 minutes until it is hot. Add the olive oil and swirl to coat the bottom of the pan.

    Sear the Steak

    Once the oil is shimmering, carefully place the seasoned filet mignon in the pan. Sear for about 3-4 minutes without moving it to develop a nice crust.

    Flip and Finish Cooking

    Using tongs, flip the steak over and add the butter and fresh rosemary or thyme to the pan. Cook for another 3-4 minutes for medium-rare, or longer if you prefer a more well-done steak. Baste the steak with the melted butter using a spoon.

    Rest the Steak

    Remove the filet from the pan and transfer it to a plate. Cover loosely with aluminum foil and let it rest for about 5-10 minutes before slicing.

    Roasting Asparagus

    Preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, minced garlic, and salt. Spread on a baking sheet and roast for about 10-15 minutes until tender and slightly charred.

    Making Mashed Potatoes

    Peel and chop the potatoes into even chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
