Preparing the Fish Fillet

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well blended. Gradually add the beer (or sparkling water) and mix until the batter is smooth and slightly thick.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, allowing excess to drip off.

    Fry the Fish

    Carefully place the battered fish fillets in the hot oil, frying for 4-5 minutes on each side or until golden brown and cooked through. Remove the fillets and drain on paper towels.

Assembling the Sandwich

    Melt the Cheese

    Place a slice of cheddar cheese on each hot fish fillet immediately after frying. Allow the cheese to melt slightly.

    Prepare the Buns

    Toast the burger buns lightly on a skillet or in a toaster until golden brown.

    Assemble the Sandwich

    On the bottom half of each bun, layer with a lettuce leaf, a slice of tomato, and the fried fish fillet with melted cheese. Top with a generous dollop of TBONZ tartar sauce, then place the top half of the bun on each sandwich.
