Preparation

    Prepare the Steak

    Remove the New York strip steak from the refrigerator and let it sit at room temperature for about 30 minutes to ensure even cooking.

    Season the Steak

    Pat the steak dry with paper towels. Rub the olive oil on both sides of the steak. Sprinkle kosher salt, black pepper, and garlic powder evenly over both sides of the steak, pressing gently to adhere.

Cooking

    Preheat the Grill or Pan

    Preheat a grill or a heavy skillet (preferably cast iron) over high heat for about 5 minutes until very hot.

    Cook the Steak

    Once the grill or skillet is hot, place the steak on it. For medium-rare, cook the steak for about 4-5 minutes on one side without moving it. Flip the steak and cook for another 3-4 minutes on the other side.

    Baste with Butter (Optional)

    If desired, during the last minute of cooking, add a tablespoon of butter and a sprig of fresh rosemary to the pan. Spoon the melted butter over the steak for added flavor.

Resting and Serving

    Rest the Steak

    Remove the steak from the grill or pan and let it rest on a cutting board for about 5-10 minutes to allow the juices to redistribute.

    Serve

    Slice the steak against the grain and serve it on a plate. Optionally, drizzle with any remaining pan juices or serve with sides of your choice.
