Method

Chicken Preparation

    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

    Cook the Chicken

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 5-7 minutes on each side until golden brown.

    Bake the Chicken

    Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C). Remove from the oven and let rest.

Shrimp and Sauce Preparation

    Cook the Shrimp

    In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from heat and set aside.

    Make the Chipotle Cream Sauce

    In the same pan used for the shrimp, add minced garlic and sauté for about 1 minute. Then, add heavy cream and chipotle peppers in adobo sauce. Stir well and let simmer for 5-7 minutes until the sauce thickens.

    Combine the Sauce and Shrimp

    Add the cooked shrimp to the chipotle cream sauce and stir to combine. Adjust seasoning with lime juice and additional salt if needed.

Assembly and Serving

    Plate the Dish

    Slice the chicken breasts and place them on serving plates. Top with the shrimp and chipotle cream sauce.

    Sprinkle chopped cilantro over the top and serve with lime wedges on the side.
