Method

Preparation of Rice

  1. 1

    Rinse the Rice

Place 2 cups of rice in a fine-mesh strainer and rinse under cold water until the water runs clear.

  2. 2

    Cook the Rice

In a medium pot, combine the rinsed rice and 4 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed. Remove from heat and let sit, covered, for 5 minutes.

Preparation of Vegetables

  1. 3

    Chop the Vegetables

Dice the bell pepper, slice the carrot into thin rounds, trim the green beans, and chop the onion.

  2. 4

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the onion and sauté until translucent. Add the bell pepper, carrot, and green beans, and cook for 5-7 minutes until softened.

Preparation of Proteins

  1. 5

    Cook the Chicken

Season the chicken breast with salt and pepper. In the same skillet, add another tablespoon of sesame oil. Cook the chicken for 6-7 minutes on each side until fully cooked. Remove from the skillet and slice.

  2. 6

    Prepare the Tofu

Press the tofu to remove excess moisture, then cut it into cubes. In the skillet, add the tofu and cook until golden brown on all sides, about 5-7 minutes.

Bringing it All Together

  1. 7

    Combine Ingredients

Return the chicken to the skillet along with the sautéed vegetables and tofu. Add minced garlic, grated ginger, and soy sauce. Stir well to combine and cook for an additional 3-4 minutes, allowing the flavors to meld.

  2. 8

    Serve

Serve the mixture over the cooked rice. Adjust seasoning with salt and pepper to taste. Enjoy!
