Prepare the Chicken

Marinate the Chicken
In a bowl, mix olive oil, salt, black pepper, garlic powder, and paprika. Add the chicken breasts and coat them evenly with the marinade. Let it sit for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, remove from grill and let rest for 5 minutes before slicing.
Assemble the Salad

Prepare the Salad Base
In a large mixing bowl, combine mixed greens, sliced red onions, and halved cherry tomatoes. Toss gently to mix the ingredients.

Add Croutons and Cheese
Add croutons, Jack cheese, and Cheddar cheese to the salad mixture. Toss again to distribute evenly.

Slice the Chicken
After the grilled chicken has rested, slice it into thin strips.

Combine Everything
Place the sliced chicken on top of the salad. If desired, drizzle with balsamic vinaigrette before serving.
