For the Fried Shrimp

Prepare the Shrimp
In a large bowl, combine the fresh shrimp with salt and black pepper. Set aside to marinate while preparing the batter.

Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, cayenne pepper, salt, and black pepper. Gradually add the cold water and whisk until smooth and free of lumps.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Shrimp
Dip each marinated shrimp into the batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the shrimp from the oil and transfer them to a plate lined with paper towels to absorb excess oil. Repeat with remaining shrimp.

Combine Ingredients
In a small bowl, mix together the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust the hot sauce to your taste preference.

Serve the fried shrimp hot with the zesty cocktail sauce on the side for dipping.
