    Cook the Bacon

    In a skillet over medium heat, cook the Applewood bacon until crispy. Remove from skillet and drain on paper towels, then chop into bite-sized pieces.

    Prepare the Eggs

    Place the eggs in a pot of cold water, bring to a boil, then reduce the heat and simmer for 10-12 minutes. Transfer to an ice bath, peel, and slice the eggs.

    Chop the Vegetables

    Slice the cherry tomatoes in half, and thinly slice the red onion.

    Grate the Cheese

    Grate or crumble the mixed cheese (Cheddar and Blue Cheese) into a bowl.

    Assemble the Salad

    In a large bowl or on a serving platter, layer the mixed greens as the base. Top with the chopped bacon, sliced eggs, grated cheese, cherry tomatoes, and red onion.

    Prepare the Dressing

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and black pepper until well combined.

    Dress the Salad

    Drizzle the dressing over the salad just before serving and toss gently to combine.
