For the Bonfire Chicken Bites

    Prepare the Chicken

    Cut the boneless, skinless chicken breasts into bite-sized pieces, approximately 1 inch in size.

    Set Up the Breading Station

    In three separate shallow bowls, set up your breading station. In the first bowl, combine flour, salt, black pepper, and garlic powder. In the second bowl, whisk the eggs until well combined. In the third bowl, place the panko breadcrumbs.

    Bread the Chicken

    Take each piece of chicken, dip it into the flour mixture, shaking off any excess. Next, dip it into the egg mixture, and finally, coat it with panko breadcrumbs. Ensure each piece is fully coated.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken bites in batches, avoiding overcrowding. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on a paper towel-lined plate.

    Toss in Bonfire Sauce

    In a large bowl, add the fried chicken bites and pour the bonfire sauce over them. Toss gently until all pieces are well coated in the sauce.

For the House-made Bleu Cheese Dressing

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, sour cream, crumbled bleu cheese, lemon juice, garlic powder, salt, and black pepper.

    Using a whisk, mix all ingredients together until smooth and well blended. Adjust seasoning with additional salt and pepper to taste.

    Cover the dressing and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
