Preparing the Wild Rice

Cook the Wild Rice
In a medium saucepan, combine the wild rice, water (or chicken broth), and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.
Making the Tartar Sauce

Prepare the Tartar Sauce
In a bowl, mix together the mayonnaise, finely chopped dill pickles, lemon juice, and salt. Stir until well combined. Refrigerate until ready to serve.

Prepare the Fish
Pat the fish fillets dry with paper towels. Rub both sides of the fillets with olive oil and then coat generously with Cajun seasoning.

Grill the Fish
Preheat a grill or grill pan over high heat. Once hot, add the seasoned fish fillets. Grill for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.
Plating the Dish

Assemble the Dish
On a plate, serve a portion of wild rice, top with a blackened fish fillet, and then add sautéed shrimp over the fish. Serve the homemade tartar sauce on the side.
