    Prepare glass

    Chill a Collins or highball glass by filling it with ice and a little cold water, or place it in the freezer for a few minutes. When ready to build the cocktail, discard the chilling ice/water.

    Mix

    In a cocktail shaker filled about halfway with ice, pour 2 oz light rum, 3 oz coconut water, 2 oz pineapple juice, and 0.5 oz fresh lime juice. If you prefer a sweeter drink, add 0.25 oz simple syrup or agave.

    Shake

    Secure the shaker lid and shake vigorously for 10–15 seconds until the outside of the shaker is cold and the ingredients are well combined and slightly aerated.

    Strain and serve

    Discard the ice from the chilled glass. Fill the glass with fresh crushed ice or ice cubes (about 1 cup). Double-strain the cocktail from the shaker into the glass to remove any small ice shards and pulp.

    Finish and garnish

    Grate a light dusting of fresh nutmeg over the top of the drink (about 1/4 to 1/2 tsp preferred; up to 1 tsp if you like more spice). Garnish with a lime wheel or wedge on the rim. Serve with a short straw.

    Notes

    Coconut water can vary in sweetness—taste before adding syrup. Use fresh lime juice for balance. For a richer coconut presence, substitute 0.5 oz cream of coconut for 0.5 oz coconut water and reduce simple syrup accordingly.
