Honey-Thyme Syrup (prepare ahead)

Combine honey and water in a small saucepan over medium heat. Stir until the honey dissolves and the mixture comes just to a simmer (do not boil).

Add the fresh thyme sprigs and optional lemon zest to the pan, reduce heat to low, and simmer gently for 3 minutes to infuse.

Remove from heat and let the syrup cool with the thyme in it for 20–30 minutes to deepen the flavor.

Strain out the thyme (and lemon zest if used) into a clean jar. Refrigerate. Syrup will keep 1–2 weeks chilled.

Muddle
Place 4 fresh blackberries in a cocktail shaker. Use a muddler to gently crush the berries until they release juice but not completely pulverized (aim for a coarse mash).

Build and shake
Add 2 oz blackberry whiskey, 0.5 oz Luxardo, 0.75 oz fresh lemon juice, 0.75 oz honey-thyme syrup and a handful of ice to the shaker with the muddled blackberries. Shake vigorously for 12–15 seconds until well-chilled and slightly frothy.

Double strain
Double strain the mixture into a chilled coupe or rocks glass over fresh ice (use a fine mesh strainer plus the shaker strainer) to remove seeds and pulp for a smooth drink. Alternatively, serve up (no ice) in a coupe.

Garnish and finish
Garnish with a fresh blackberry skewered on a thyme sprig and a lemon wheel or twist on the rim. Optionally, slap the thyme between your palms before placing it on the drink to release aromatics.
