    Prepare and shake

    Fill a cocktail shaker with ice (about 1 cup). Add 1.5 oz Clementino liqueur, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of piment bitters. Cap the shaker and shake vigorously for 10–12 seconds until the outside of the shaker becomes very cold.

    Strain and top

    Strain the shaken mixture into a chilled wine glass or large coupe filled halfway with fresh ice (or without ice if you prefer). Gently top with 3 oz chilled Prosecco. Stir once gently with a bar spoon to combine without flattening the bubbles.

Garnish & Finish

    Express the oils of a clementine peel over the surface by holding the peel skin-side down and giving it a quick twist above the drink; optionally rub the peel around the glass rim and drop the wheel or twist into the drink. Garnish with a sprig of fresh mint if using. Serve immediately.
