Cook aromatics

Heat a 10-inch skillet over medium heat. Add 1 tablespoon neutral oil (or a little butter if preferred). Add the finely chopped onion and cook, stirring, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds more until fragrant.

Brown the beef

Increase heat to medium-high and add the ground beef to the skillet. Break it up with a spatula and cook until no longer pink and starting to brown, about 5–7 minutes.

Season and finish filling

Stir in the ground cumin, smoked paprika, ground coriander, salt, and black pepper. Add the tomato paste and stir to coat the meat. Pour 2 tablespoons hot water and scrape up any browned bits from the bottom of the pan. Reduce heat to medium and simmer 2–3 minutes until mixture is saucy but not wet. Taste and adjust seasoning. Remove from heat and stir in the chopped parsley. Transfer filling to a bowl and let cool slightly for 5 minutes.

Prep pitas

Preheat a grill pan or heavy skillet over medium-high heat (or preheat outdoor grill to medium). Using a small knife, create a pocket in each pita if not pre-slit: insert the knife into the edge and cut a semicircle to open a pocket. Brush both outside faces of each pita lightly with melted butter or olive oil (about 1/2 tablespoon per pita) to promote browning.

Fill pitas

Open each pita pocket and divide the warm meat mixture evenly between 4 pitas (about 1/4 lb raw weight yields about 1/4 cup cooked per pita depending on yield). Add 1/4 cup shredded mozzarella into each pocket over the meat. If using, sprinkle 1 tablespoon crumbled feta into each pocket for tang.

Close and grill

Press the open edge lightly to keep contents inside. Place stuffed pitas seam-side down on the hot grill pan or skillet. Cook 2–3 minutes per side, pressing gently with a spatula or a heavy pan, until the exterior is browned and crisp and the cheese inside is melted. If using an oven, you can place on a baking sheet under a broiler for 2–3 minutes, watching carefully so they do not burn.

Finish and serve

Remove pitas from heat and let rest 1 minute. Slice each in half if desired. Serve hot with lemon wedges and optional yogurt or tzatziki on the side; offer hot sauce for those who want heat.

Optional garnish / sauce

Mix 1/2 cup plain yogurt with 1 teaspoon hot sauce or a pinch of salt and a squeeze of lemon if you like. Serve this sauce alongside the Toshka for dipping or drizzle a tablespoon into each pocket before serving.
