Prepare Syrup and Flavor
Make simple syrup (if not using pre-made)
Combine equal parts granulated sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and let cool to room temperature. Chill if time allows. (This yields about 1 cup.)
If using fruit purée: mash or blitz fresh or thawed fruit and strain if you prefer a smoother soda. Measure 1/4 cup purée or juice per 4 cups carbonated water. For thicker purées, thin slightly with 1–2 teaspoons water or additional simple syrup so it mixes well.
If using fresh herbs: gently clap or lightly muddle 4–6 leaves in the bottom of a sturdy glass or mixing container to release oils. Avoid over-muddling which can make the drink bitter.
If using ginger: grate a small piece and press through a fine sieve to collect about 1 teaspoon of ginger juice, or use bottled ginger juice. For vanilla, measure 1/4 teaspoon extract or syrup.
Assemble Soda
Fill a pitcher or jar with 1 cup of ice (optional) and add the prepared flavoring: fruit purée or juice (1/4 cup), muddled herbs, ginger juice, and/or vanilla. Add 1 tablespoon fresh citrus juice if using to brighten flavors.
Pour in 1/2 cup simple syrup (adjust to taste). If you prefer less sweet soda, start with 1/4 cup and taste before adding more.
Slowly add 4 cups chilled carbonated water to the pitcher. Stir gently with a long spoon once or twice — avoid vigorous stirring to retain carbonation. Taste and adjust sweetness or acidity: add a little more syrup or a squeeze of citrus as needed.
If using muddled herbs, let the assembled soda sit 2–3 minutes to steep for mild herbal flavor, then gently strain into serving glasses if you prefer no leaf bits.
Serve
Fill serving glasses with ice (about 1/2 to 1 cup per glass). Pour the soda over the ice, dividing evenly (this recipe yields about 4 servings of ~1 cup soda plus ice).
Garnish each glass with a citrus slice and a fresh herb sprig. Serve immediately while fizzy.
Storage: keep leftover soda (without ice) chilled in a sealed bottle or pitcher and consume within 24 hours — flavor may fade and carbonation will dissipate.
