Soak to remove bitterness

Place the liver cubes in a bowl and cover with the 1 cup of milk. Refrigerate and soak for 20–30 minutes. This mellows flavor and tenderizes the liver.

Drain and pat dry

After soaking, drain the milk and pat the liver cubes thoroughly dry with paper towels. Removing moisture helps achieve a good crust when frying.

Season and dredge

In a shallow dish, combine the flour, 1.5 tsp salt, 1 tsp pepper, and 1/2 tsp paprika. Toss the dried liver cubes in the seasoned flour to coat evenly, shaking off excess flour.

Onions & Garnish

While the liver soaks, prepare the onions: heat 1 tablespoon of oil and 1 tablespoon of butter in a large skillet over medium heat. Add the thinly sliced onions and a pinch (about 1/4 tsp) of salt. Cook, stirring occasionally, until the onions are soft and golden-brown, about 12–15 minutes. If they brown too quickly, lower the heat. Transfer the caramelized onions to a bowl and keep warm.

When liver is finished frying (next section), return the cooked onions to the pan briefly to warm together with the liver for 30–60 seconds before serving. Sprinkle chopped parsley over the finished dish and serve with lemon wedges.

For Frying

Heat a large heavy skillet (cast iron preferred) over medium-high heat until hot, about 2 minutes. Add the remaining 2 tablespoons oil and 1 tablespoon butter. When the butter foams and the fat is shimmering, add the dredged liver cubes in a single layer without crowding — do this in 1 or 2 batches depending on pan size.

Fry the liver cubes for 1.5–2 minutes per side for medium (slightly pink center) or 2.5–3 minutes per side for well done, turning once. Do not overcook: liver becomes tough and grainy if cooked too long. Use tongs to turn gently. If you have thicker pieces (over 1 inch), add 30–60 seconds per side.

As each batch finishes, transfer liver to a warm plate and tent loosely with foil. If pan becomes dry between batches, add a small splash (about 1 tsp) oil or butter to keep pan slick. After all batches are done, return all liver to the skillet with the onions for 30–60 seconds just to marry flavors and reheat.
