    Prepare the Filling

    In a large mixing bowl, combine the rice, chopped onion, parsley, dill, mint, 2 tablespoons of olive oil, lemon juice, salt, and black pepper. Mix well and set aside.

    Prepare the Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess salt. If using fresh grape leaves, blanch them in boiling water for 2-3 minutes until tender. Drain and cool.

    Stuff the Grape Leaves

    Place a grape leaf, vein side up, on a flat surface. Add about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Cook the Stuffed Grape Leaves

    In a large pot, layer any leftover grape leaves on the bottom. Place the stuffed grape leaves seam side down in the pot. Add the remaining 2 tablespoons of olive oil and cover with water or vegetable broth. Bring to a simmer, cover, and cook on low heat for about 45 minutes until the rice is tender.

    Serve

    Allow the stuffed grape leaves to cool slightly before serving. They can be served warm or at room temperature, drizzled with additional lemon juice if desired.
