Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Flatbread
Place the flatbreads on a baking sheet and brush both sides lightly with olive oil.
Slice the Tomatoes
Wash the heirloom tomatoes and slice them into thin rounds. Set aside.
Prepare the Mozzarella
Tear the fresh mozzarella into small pieces or slices.
Wash the Basil
Rinse the fresh basil leaves under cold water and pat dry with a paper towel.
Assembly
Assemble the Flatbreads
Evenly distribute the sliced heirloom tomatoes over the oiled flatbreads. Sprinkle with salt and black pepper.
Add Mozzarella
Top the tomatoes with pieces of fresh mozzarella cheese.
Bake the Flatbreads
Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the cheese is melted and slightly golden.
Finishing Touches
Add Basil and Balsamic Glaze
Remove the flatbreads from the oven and immediately scatter the fresh basil leaves on top. Drizzle with balsamic glaze.
Slice and Serve
Cut the flatbreads into slices and serve hot.
