Preparing the Beef

    Marinate the Beef

    In a large bowl, combine the soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and chili flakes. Mix well until the sugar is dissolved. Add the beef short ribs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Beef

    Preheat your oven to 160°C (320°F). Remove the beef from the marinade and place it in a roasting pan. Strain the marinade and pour it over the beef. Cover the pan with foil and roast in the oven for 2.5 to 3 hours, until the meat is tender and falling off the bone.

    Prepare the Shallots

    While the beef is cooking, slice the shallots thinly. In a small saucepan, heat the vegetable oil over medium heat. Once hot, add the sliced shallots and fry until they turn golden brown and crispy. Remove them from the oil and drain on paper towels. Season with a pinch of salt.

    Prepare the Spring Onions

    Chop the spring onions finely and set them aside for garnish.

Finishing Touches

    Serve the Beef

    Once the beef is cooked, remove it from the oven and let it rest for 10 minutes. Slice the beef and arrange it on a serving plate. Drizzle some of the reduced marinade over the top.

    Sprinkle the crispy shallots and chopped spring onions generously over the beef before serving.
