Filling Preparation
Sauté the Aromatics
In a skillet over medium heat, add a tablespoon of vegetable oil. Once hot, add the minced garlic and shallots. Sauté for about 2-3 minutes until fragrant and translucent.
Season the Filling
Add the chopped thyme, black truffle oil, soy sauce, salt, and freshly ground black pepper to the mushroom mixture. Stir well and cook for an additional 2 minutes. Remove from heat and let cool slightly.
Mix in Cream Cheese
Once the mushroom mixture is slightly cooled, fold in the softened cream cheese until well combined. Set aside.
Spring Roll Assembly
Prepare the Wrappers
Lay out a spring roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the mushroom filling in the center.
Roll the Spring Roll
Fold the corner closest to you over the filling, then fold in the sides. Roll tightly away from you, sealing the edge with a mixture of cornstarch and water.
Heat the Oil
In a deep frying pan, heat the vegetable oil to 350°F (175°C). Make sure the oil is hot enough for frying.
Fry the Spring Rolls
Carefully place the spring rolls in the hot oil, cooking until golden brown and crispy, about 3-4 minutes. Turn occasionally for even cooking. Remove and drain on paper towels.
