Method

Fish Preparation

  1. 1

    Season the Fish

Sprinkle the koi fish fillets with salt, black pepper, and cayenne pepper on both sides. Let it marinate for about 15 minutes to absorb the flavors.

  2. 2

    Cook the Fish

In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned koi fish fillets and cook for 4-5 minutes on each side, or until the fish is cooked through and flaky.

Truffle Aioli Preparation

  1. 3

    Mix the Ingredients

In a medium bowl, combine mayonnaise, truffle oil, minced garlic, and lemon juice. Stir well until everything is fully incorporated.

  2. 4

    Season the Aioli

Add salt to taste, adjusting according to your preference. Set aside to let the flavors meld.

Citrus Ponzu Preparation

  1. 5

    Combine Sauces

In a small bowl, whisk together soy sauce, yuzu juice, rice vinegar, lime juice, and mirin until well mixed.

Assembly

  1. 6

    Plate the Fish

Place the cooked koi fish fillets on a serving plate.

  2. 7

    Add Aioli and Ponzu

Drizzle truffle aioli over the fish and then drizzle the citrus ponzu around the plate for added flavor.

  3. 8

    Garnish

Top the dish with caviar, chopped chives, and lemon zest for a colorful and flavorful garnish.
