Tuna Preparation

    Prepare the Tuna

    Pat the tuna steaks dry with paper towels. Brush each side with olive oil and season generously with sea salt, black pepper, and the seven spice blend.

    Sear the Tuna

    Heat a skillet over high heat until very hot. Place the tuna steaks in the skillet and sear for about 1-2 minutes on each side for rare, depending on the thickness. Remove from heat and let rest for a minute.

Truffle Aioli

    Make the Truffle Aioli

    In a bowl, combine mayonnaise, truffle oil, minced garlic, lemon juice, and salt. Whisk together until smooth and creamy. Adjust seasoning if necessary.

Citrus Ponzu

    Prepare the Citrus Ponzu

    In a separate bowl, mix soy sauce, yuzu juice, rice vinegar, and mirin. Stir in finely chopped green onions. Set aside.

Plating

    Plate the Dish

    Slice the seared tuna into thin strips. Arrange on a plate. Drizzle with the citrus ponzu and dollop truffle aioli alongside. Garnish with caviar and microgreens or edible flowers.
