Prepare the Pak Choi
Rinse the pak choi under cold running water to remove any dirt or grit. Pat dry with a clean towel. Cut off the base of the pak choi and separate the leaves.

Chop Aromatics
Peel and mince the garlic. Peel the ginger and slice it into thin strips or mince it, depending on your preference.

Prepare Garnish (Optional)
If using green onions, chop them into thin rounds. Set aside. Measure out sesame seeds if you want to add them as a garnish.
Cooking

Heat the Oil
In a large skillet or wok, heat the sesame oil over medium-high heat.

Sauté Garlic and Ginger
Add the minced garlic and ginger to the hot oil. Sauté for 1-2 minutes until fragrant, being careful not to burn them.

Add Pak Choi
Add the prepared pak choi leaves to the skillet. Stir-fry for 3-4 minutes until the leaves are wilted but still bright green.

Season the Pak Choi
Pour in the soy sauce, and sprinkle with salt and black pepper. Stir well to combine and cook for an additional 1-2 minutes.

If using, sprinkle sesame seeds and chopped green onions over the stir-fried pak choi. Serve immediately as a side dish or over rice.
