Prepare Mousse Base

Bloom the Gelatin
In a small bowl, combine the gelatin powder with cold water. Stir gently and let it sit for about 5 minutes until it blooms.

Mix Matcha and Sugar
In a medium mixing bowl, sift the matcha green tea powder and granulated sugar together to remove any lumps.

Whip the Heavy Cream
In a large mixing bowl, pour in the heavy cream and whip it using an electric mixer until soft peaks form. Be careful not to overwhip.

Whip Egg Whites
In another clean bowl, whip the egg whites until soft peaks form. Gradually add in the remaining granulated sugar and continue to whip until stiff peaks form.

Melt the Gelatin
Microwave the bloomed gelatin for about 10-15 seconds until it melts. Allow it to cool slightly.

Fold the matcha and sugar mixture into the whipped cream gently. Then, fold in the melted gelatin, ensuring it is evenly distributed.

Gently fold the whipped egg whites into the matcha mixture in three additions, being careful not to deflate the mixture.

Spoon the mousse mixture into individual serving dishes or glasses.

Refrigerate the mousse for at least 2 hours, or until set.
