Prepare the Mochi Dough
In a large mixing bowl, combine the sweet rice flour, water, sugar, and salt. Mix until smooth. Transfer the mixture to a microwave-safe dish, cover with plastic wrap, and microwave on high for 1 minute.

Cook the Dough
After 1 minute, remove from microwave, stir well, cover again, and microwave for an additional 1 minute. Repeat the process one more time to cook the dough for a total of 3 minutes. It should be sticky and slightly translucent.

Cool the Dough
Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool for about 10 minutes.
Assemble the Mochi

Shape the Mochi
Once the mochi dough is cool enough to handle, divide it into small portions (about 1.5 inches in diameter). Flatten each portion into a disc shape, making sure to dust the surface with cornstarch to prevent sticking.

Fill the Mochi
Place a teaspoon of the chilled mango puree in the center of each flattened dough disc. Carefully fold the edges of the dough over the filling and pinch to seal, forming a ball.

Once all the mochi are filled and sealed, roll them in cornstarch to prevent sticking. Place them on a plate or tray.
