Preparation

    Prepare the Lychee

    Peel the lychee fruit, remove the seeds, and place the flesh into a blender.

    Make the Syrup

    In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool.

    Blend

    Add the cooled sugar syrup and lemon juice to the blender with the lychee. Blend until the mixture is smooth.

Chill and Freeze

    Chill the Mixture

    Pour the lychee mixture into a shallow dish and place it in the freezer for about 1 hour.

    Stir and Freeze

    After 1 hour, remove the mixture from the freezer and stir it vigorously with a fork to break up any ice crystals. Return it to the freezer.

    Repeat Stirring

    Repeat the stirring process every 30 minutes for a total of 2-3 hours, or until the sorbet is firm and fluffy.

Serve

    Scoop and Serve

    Once the sorbet is fully frozen, use an ice cream scoop to serve it into bowls. Garnish with mint leaves if desired.
