Lobster and Prawn Toast

Lobster and Prawn Toast

Prepare the Seafood Mixture
In a mixing bowl, combine the chopped lobster meat and prawns. Add the chopped coriander, spring onion, minced garlic, lime juice, chili flakes, and salt to the mixture. Stir until well combined and set aside.

Prepare the Bread
Heat a non-stick skillet over medium heat. Spread butter on one side of each slice of sourdough bread. Once the skillet is hot, place the bread slices butter-side down in the skillet.

Toast the Bread
Toast the bread for about 2-3 minutes or until golden brown, then flip the slices and toast the other side for an additional 2 minutes.

Add the Seafood Mixture
Once the bread is toasted and golden, remove the slices from the skillet and place them on a baking tray. Spoon the seafood mixture generously on top of each slice.

Broil the Toast
Preheat your oven's broiler. Place the baking tray under the broiler for about 3-4 minutes, or until the prawn and lobster mixture is heated through and slightly golden.
Coconut, Lime & Chilli Foam

Combine Ingredients
In a saucepan, combine the coconut milk, lime juice, chili paste, and salt. Heat gently over low heat, stirring until everything is well mixed and warmed through.

Create the Foam
Remove the saucepan from the heat and sprinkle the soy lecithin over the mixture. Use an immersion blender to blend the mixture until foamy.

Serve
Spoon the coconut, lime, and chili foam over the lobster and prawn toast just before serving.
