Preparation of Tofu

Press the Tofu
Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture. Let it sit for about 20 minutes.

Marinate the Tofu
Once pressed, cut the tofu into bite-sized cubes. In a bowl, mix soy sauce, sesame oil, rice vinegar, and Sichuan peppercorns. Add tofu cubes and let them marinate for 15 minutes.

Coat the Tofu
Sprinkle cornstarch over the marinated tofu and toss gently to coat evenly.
Cooking the Dish

Fry the Tofu
In a large pan or wok, heat a tablespoon of oil over medium-high heat. Add the coated tofu and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.

Make the Sauce
In a small bowl, mix together chili paste, sugar, and water. Add this mixture to the pan with the vegetables.

Serve
Remove from heat and serve hot, garnished with additional spring onions if desired.
