Prepare the Ingredients
Clean and slice the king oyster mushrooms into thick strips. Rinse the leeks thoroughly to remove any dirt, then slice them into thin rings. Wash the pak choi and separate the leaves from the stems.
Cooking the Curry

Add Mushrooms and Curry Paste
Add the sliced king oyster mushrooms to the pan. Cook for another 4-5 minutes until they are slightly browned. Stir in the red curry paste and cook for 2 minutes to release its flavors.

Combine with Liquids
Pour in the coconut milk and vegetable broth. Stir well to combine all ingredients. Add soy sauce and brown sugar, then season with salt and black pepper.

Simmer the Curry
Bring the mixture to a gentle simmer. Let it cook for about 10-15 minutes, stirring occasionally, until the mushrooms are tender and the flavors meld together.
Finishing Touches

Add Pak Choi
In the last 5 minutes of cooking, add the pak choi leaves and stems to the curry. Stir gently and allow them to wilt and cook through.

Once everything is cooked, taste and adjust seasoning if necessary. Serve the curry warm over rice or noodles, garnished with fresh herbs if desired.
