Preparation

    Prepare the Beef Fillet

    Trim any excess fat from the beef fillet and cut it into thin slices, about 1/4 inch thick.

    Marinate the Beef

    In a bowl, combine the sliced beef fillet with soy sauce, cornstarch, and black pepper. Mix well and let it marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the red and green bell peppers into thin strips, and peel and slice the shallots and garlic.

    Heat the Wok

    In a large wok or frying pan, heat the vegetable oil over high heat until it shimmers.

    Cook the Beef

    Add the marinated beef fillet to the hot wok in a single layer. Stir-fry for about 2-3 minutes until browned. Remove the beef from the wok and set aside.

    Sauté the Vegetables

    In the same wok, add the sliced shallots and garlic. Stir-fry for about 1 minute until fragrant. Then add the bell pepper strips and continue to stir-fry for an additional 2-3 minutes until they are tender-crisp.

    Combine and Finish

    Return the cooked beef to the wok with the vegetables. Drizzle with sesame oil and add salt to taste. Stir-fry everything together for 1-2 minutes to heat through and combine flavors.
