Pineapple Preparation

    Prepare the Fresh Pineapple

    Cut the fresh pineapple into small chunks, removing the outer skin and core. You will need a medium pineapple for the preparation. Reserve half for the daiquiri assembly and the other half for the syrup.

    Juice the Limes

    Squeeze fresh limes to yield one cup of lime juice. Set aside for use in the daiquiri assembly.

    Make Simple Syrup

    In a small saucepan, combine equal parts sugar and water (1:1 ratio). Heat on medium until the sugar is fully dissolved. Set aside to cool.

Pineapple Syrup

    Prepare Pineapple Syrup

    In a blender, combine 1 cup of pineapple chunks, 1 cup of sugar, and 1 cup of water. Blend until smooth. Strain through a fine mesh sieve into a saucepan, pressing to extract as much liquid as possible. Discard solids.

    Simmer the Syrup

    Heat the strained liquid over medium heat until it simmers. Let it simmer for about 10 minutes until slightly thickened. Remove from heat and let it cool.

Daiquiri Assembly

    Mix the Daiquiri

    In a cocktail shaker, combine 2 ounces of Seedlip Spice, 1 ounce of pineapple syrup, and 1 ounce of fresh lime juice.

    Shake with Ice

    Add 2 cups of crushed ice to the shaker. Secure the lid and shake vigorously for about 15-20 seconds until well chilled.

    Serve

    Strain the mixture into a chilled glass. Optionally garnish with a pineapple wedge and serve immediately.
