Method
Dumplings
Prepare the Dumpling Mixture
In a large bowl, combine egusi, all-purpose flour, baking powder, and salt. Mix well.
Add Wet Ingredients
Gradually add water and vegetable oil to the dry ingredients. Stir until a dough forms.
Shape the Dumplings
Using your hands, form small balls of the dough and set aside.
Cook the Dumplings
Bring a pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10 minutes or until they float to the surface.

Prepare the Sauce Base
Blend tomatoes, red bell pepper, onion, and scotch bonnet pepper until smooth.
Cook the Sauce
In a pot, heat vegetable oil over medium heat. Pour in the blended mixture and cook until the sauce thickens (about 15-20 minutes).
Season the Sauce
Add salt, seasoning cubes, and ground crayfish to the sauce. Stir well and let it simmer for another 5 minutes.
Pickled Pearl Onion
Prepare the Pickling Liquid
In a small saucepan, combine white vinegar, sugar, and salt. Bring to a simmer until the sugar dissolves.

Season the Crab
In a bowl, mix the Jonah crab meat with lemon juice and salt to taste. Set aside for serving.
