Method

Prepare the Salad Base

Chop the Cucumber

Wash the Persian cucumbers thoroughly, then slice them into thin rounds or half-moons, depending on your preference. Place in a large salad bowl.

Prepare the Grapes

Wash the seasonal grapes under cold water. Remove the stems and add the grapes to the salad bowl with the cucumbers.

Add Crispy Quinoa

If you haven't prepared crispy quinoa yet, cook quinoa according to package instructions, then spread it on a baking sheet and bake at 400°F (200°C) until golden and crispy. Allow to cool and then add to the salad bowl.

Make the Piri Piri Dressing

Combine Ingredients

In a small bowl, whisk together the olive oil, red wine vinegar, honey, Piri Piri sauce, minced garlic, salt, and black pepper until well combined.

Assemble the Salad

Mix the Salad

Pour the Piri Piri dressing over the salad base in the bowl and toss gently to combine everything evenly.

Garnish and Serve

Top the salad with chopped fresh cilantro and serve with lemon wedges on the side for an extra citrus kick.
