Preparation

    Select mature Espadin agave plants, typically around 7-10 years old, and use a coa (a traditional tool) to harvest the hearts (piñas) by removing the leaves.

    Steam the harvested piñas in an underground oven (horno) for 24-48 hours until soft, allowing the natural sugars to develop.

    Once cooked, crush the piñas using a tahona (a stone wheel) or mechanical crusher to extract the agave juice.

Fermentation

    Combine the extracted agave juice with 2000 ml of water in a fermentation vessel.

    Add 0.05 kg of yeast to the mixture and stir well to ensure even distribution.

    Allow the mixture to ferment for 5-10 days at a controlled temperature, monitoring the fermentation process until bubbling slows.

Distillation
