Brewing and Distilling Process

Mashing
Begin by heating 3000 ml of water in a mash tun. Once the water is heated to approximately 64°C (147°F), add 1000 grams of malted barley. Stir well to ensure all the grains are saturated with water. Maintain the temperature for about 60 minutes to allow the enzymes to convert starches into fermentable sugars.

Lautering
After mashing, transfer the mash to a lauter tun. Allow the liquid (wort) to drain off, while rinsing the grains with additional hot water to extract more sugars. Collect the wort in a clean container.

Fermentation
Cool the collected wort to around 20°C (68°F) and transfer it to a fermentation vessel. Add 5 grams of yeast and seal the vessel. Allow it to ferment for approximately 4-7 days, until fermentation is complete and bubbling has ceased.

Distillation
Once fermentation is complete, transfer the liquid to a pot still. Heat gradually to separate the alcohol from the solids. Collect the distillate and repeat the process in a second distillation to achieve a higher purity.

Maturation
Transfer the distilled spirit into oak casks for aging. Store in a cool, dark place for a minimum of 10 years. During this time, the whisky will absorb flavors from the wood, developing its unique character.
