Fish Preparation
1. Clean the Branzino
Rinse the branzino under cold water and pat dry with paper towels. Make sure to remove any scales and internal organs.
2. Season the Fish
Sprinkle salt and black pepper generously inside and outside the branzino.
3. Dredge in Flour
Spread the all-purpose flour in a shallow dish. Dredge each branzino in the flour, ensuring it is evenly coated.
Cooking the Fish
4. Heat the Oil
In a large frying pan, heat the olive oil over medium-high heat until shimmering.
5. Fry the Fish
Carefully place the floured branzino in the hot oil. Fry for about 6-8 minutes on each side, or until golden brown and crispy.
6. Drain Excess Oil
Once cooked, remove the fish from the pan and place on a paper towel-lined plate to drain excess oil.

7. Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
8. Cook the Rice & Peas
In a medium saucepan, combine the rinsed rice, coconut milk, water, kidney beans, minced garlic, thyme, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
