Method
Preparation
- 1
Prepare the Pork Skins
Start by thoroughly cleaning the pork skins. Remove any excess fat and hair, ensuring the skins are as clean as possible.
- 2
Cut the Skins
Cut the pork skins into small pieces or strips, approximately 1-2 inches in size. This will help them cook evenly.
Cooking
- 3
Boil the Skins
In a large pot, bring water to a boil. Add the pork skins and boil for 30 minutes. This helps to soften them before frying.
- 4
Drain and Dry
After boiling, drain the pork skins and lay them out on a clean towel. Pat them dry to remove excess moisture.
- 5
Season the Skins
In a bowl, mix together salt, chili powder, garlic powder, and paprika. Rub this seasoning mix all over the dried pork skins.
- 6
Fry the Skins
In a deep frying pan, heat oil to 350°F (175°C). Carefully add the seasoned pork skins in batches and fry until they puff up and turn golden brown, about 2-3 minutes per batch.
- 7
Drain Excess Oil
Once fried, remove the pork skins and place them on a paper towel-lined plate to drain any excess oil.
- 8
Add Optional Flavorings
If desired, sprinkle cayenne pepper and lemon zest over the hot pork skins for an extra kick of flavor.
