Main Ingredients
Distillation and Aging
Method
Fermentation
- 1
Prepare the Sugarcane Juice
Extract the juice from fresh sugarcane using a press. Ensure that the juice is clear and free from impurities.
- 2
Mix with Water
In a clean fermentation vessel, combine 1 liter of sugarcane juice with 0.5 liters of water to dilute the juice slightly.
- 3
Add Yeast
Sprinkle 20 grams of yeast over the mixture. Stir gently to incorporate the yeast into the sugarcane juice mixture.
- 4
Ferment
Cover the fermentation vessel with a cloth and place it in a warm, dark place for about 5-7 days, allowing the mixture to ferment and bubble.
Distillation
- 5
Prepare Distillation Equipment
Set up your distillation equipment according to the manufacturer's instructions. Ensure all components are clean and sanitized.
- 6
Distill the Fermented Mixture
Pour the fermented mixture into the distillation apparatus and heat it slowly. Collect the distillate that comes out of the condenser.
- 7
Separate the Heads and Tails
During distillation, separate the 'heads' (first distillate) and 'tails' (last distillate) from the 'heart' (main distillate) for a clean spirit.
Aging (Optional)
- 8
Transfer to Oak Barrels
If aging is desired, transfer the clear distillate into oak barrels for at least 3 months to develop more complex flavors.
- 9
Monitor Aging Process
Check the barrels periodically and taste the rum to ensure it develops the desired flavor profile.
