Brown Stew Chicken

Prepare the Chicken
In a large bowl, season the chicken pieces with salt, black pepper, minced garlic, thyme, and the whole scotch bonnet pepper. Let it marinate for at least 30 minutes.

Brown the Chicken
In a large pot, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and brown them on all sides, about 5-7 minutes. Remove the chicken and set aside.

Add Chicken Back
Add the browned chicken back to the pot, followed by the chopped tomatoes, chicken broth, brown sugar, and soy sauce. Stir to combine.

Simmer
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 30-40 minutes until the chicken is cooked through and tender.

Rinse Rice
Rinse the long-grain rice under cold water until the water runs clear.

Combine Ingredients
In a medium saucepan, combine the rinsed rice, canned red kidney beans, coconut milk, water, thyme, and salt.

Cook Rice
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is tender and the liquid is absorbed.
Pepper Jam

Prepare Ingredients
In a pot, combine the chopped red bell pepper, jalapeño pepper, sugar, and apple cider vinegar.

Cook Jam
Bring the mixture to a boil over medium heat, stirring frequently. Once boiling, reduce the heat and simmer for about 10 minutes.

Add Pectin
Stir in the pectin and continue to cook for another 5-10 minutes until the jam thickens.

Cool and Store
Remove from heat and let it cool. Store in sterilized jars in the refrigerator.
