Method

Black Bean Hummus

    Prepare the Ingredients

    Rinse and drain the black beans. Peel and chop the garlic.

    Blend the Ingredients

    In a food processor, combine black beans, tahini, garlic, olive oil, lemon juice, ground cumin, salt, and black pepper. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add water a tablespoon at a time and blend until desired consistency is reached.

Berbere Spiced Lamb

    Prepare the Lamb

    In a bowl, mix ground lamb with berbere spice blend, minced garlic, and salt. Let it marinate for at least 15 minutes.

    Cook the Lamb

    Heat olive oil in a skillet over medium heat. Add the marinated lamb and cook until browned and fully cooked, about 8-10 minutes.

Sweet Pickled Sultana

    Combine Ingredients

    In a saucepan, combine sultana raisins, apple cider vinegar, sugar, water, and salt.

    Simmer the Mixture

    Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool.

    Pickle the Sultanas

    Once cooled, transfer the mixture to a jar and refrigerate for at least 1 hour before serving.

M’semen

    Prepare the Dough

    In a bowl, mix flour and salt. Gradually add warm water and knead until a soft dough forms. Let it rest for 30 minutes.

    Shape the M’semen

    Divide the dough into small balls. Roll each ball out into a thin circle. Brush with melted butter and fold into a square.

    Cook the M’semen

    Heat a skillet over medium heat. Cook each folded piece for about 2-3 minutes on each side until golden brown.
